Behold pantaleo (or as I like to say "pantaLEOnardo dicaprio". Sometimes I like to give cheeses famous alter egos...my fav is Nikki "mellage"). This goat beauty is from the island of Sardinia Italy. Hailing from the land of sheep cheese, this 100 day aged Capra Sarda goat cheese can stand on its own. Firm like an aged pecorino but with bright floral notes. Lemony tang, salty & mildly peppery. This cheese is perfect for shaving over salads, grilled asparagus , or adding to a veggie quiche or frittata. Pairs nicely with a Vermentino like Capichera, which is also from Sardinia.
